About Capri and Capri Cooks

I have worked at creating memorable and nutritious meals for years, and the joy of serving these meals to friends and family led me to start “Capri Cooks.”  The bottom line of my business is healthy, delicious food.  But the whole picture is so much more than that: Capri Cooks is about creating a comforting and convenient experience that caters to your needs.  Having struggled with my own weight and health issues, I am sensitive to the difficulties of balancing busy and demanding lifestyles with taking care of yourself and your family.  My mission is to delight customers with a service that helps you to strike that balance.

I made the decision to be a vegetarian as a child, and quickly realized that peanut butter and jelly sandwiches can only take a girl so far.  Living in the Lehigh Valley, healthy and delicious vegetarian options at restaurants and even in grocery stores were always limited.  With the support of my family (all excellent cooks) I learned from an early age how to cook healthy and delicious vegetarian meals for myself using common ingredients.  

Over the last 15 years, I have honed my palate and cooking skills tremendously, and the availability of quality ingredients at local stores has expanded the possibilities for vegetarian cuisine and elevated it to a new level of culinary quality.

I cook for vegetarians and omnivores alike, and take pleasure in combining a love of food and flavor to a commitment to eating with a mind for personal health, environmental sustainability, and supporting the local food economy by buying from local farms when planning meals.  For vegetarians and vegans, I offer the rare opportunity to enjoy a delicious, well balanced meal without having to substitute or omit or make special arrangements.  For omnivores, you will have the opportunity to enjoy a truly satisfying and unique meal, while providing your body relief from the cholesterol, saturated fat, and carcinogens found in many meats.
